Not So Naughty: fun and easy to bake, a joy for your taste buds

Denying yourself the pleasure of pudding because it’s springtime and you need to get into your bikini by summer is a thing of the past. I have been making the most delectable pudd ever, without the guilt, calories and time consumption. It’s Nutriseed’s Not So Naughty and you’ll find it in your Pick n Pay, Clicks, independent retailers and all Dischem stores nationwide in the health and wellness or baking aid sections.

The product has just had a facelift in terms of packaging. There has also been a welcome change in the addition of separate little packs of sugar – free chocolate discs which are added halfway in the cooking process, adding that gooey richness that all chocolate pudding lovers look for.

Now, a cake in a cup cooked in the microwave is not something new. But this particular one is really a healthy option: the premix packet ingredients include desiccated coconut, cocoa powder, and baking powder (Cream of Tartar and Baking Soda). All you have to do is add water, egg, and oil – and if you want a little sweetness, you can add some honey, fructose or xylitol to your taste.

Preparation time: under 10 minutes

Healthy or Naughty?

There are 5 packets of premix in the carb-conscious package, along with 5 sachets of chocolate discs – but you can be as creative as you like and add whatever takes your fancy – nuts, seeds or berries are some good choices. Beat up the wet ingredients in a cup first, and then add the dry ingredients.

Cook for 45 seconds in the microwave and then add in the chocolate discs or whatever else you may like. Cook for another 45 seconds and you’ll have a decadent chocolate dessert ready to eat! Garnish with chocolate flakes or strawberries, pipe cream or drizzle liqueur over the top. You can dress it up or down depending on how naughty/healthy you feel.

Not So Naughty is suitable for those who follow a banting, paleo, wheat – and gluten-free lifestyle. This dessert is low-carb (less than 2gm of carbs per serving), high in protein, diabetic-friendly and GMO free. And it’s really so convenient.

Here are some baking tips:

  • Always check the strength of your microwave – your cooking time will be determined by its power: 1.5 mins for stronger ovens and 2 minutes for slightly weaker ones
  • If you are introducing any chocolate into the cake mixture, watch that it doesn’t burn
  • When adding any additional ingredients like crushed pecans, you will need to add a little more milk or water than stated on the box
  • If you are using sweeteners like Erythritol make sure you mix in properly. Erythritol makes the mixture liquid at the bottom
  • Turn out or eat straight from the cup
